We are pleased to announce that Accents, a restaurant offering modern Russian and local cuisine interpreted by Chef Vladimir Alekseev, has opened at the country club. “When creating the menu, I was thinking about flavor… About how flavors work together, with a distinctive accent in every dish,” the chef emphasizes.

Respect for the ingredient, the season, and its origins lies at the very core of the concept behind Accents. The freshness of vegetables and garden herbs, the delicacy of fish, the depth of meat, the pronounced tartness of berries, and the character of spices come together in dishes where contemporary presentation does not compete with authentic flavor but helps it shine brighter. Local ingredients and the culinary traditions of the peoples of Russia are rediscovered through one precisely chosen detail—a flavor accent.

The Accents menu unfolds as a continuous story of flavor: from a light, fresh beginning through rich soups and expressive main courses to a gentle dessert finale.

The meal begins with a trio of northern salmon and Moscow-region milk caps in sour cream: delicate fish and the forest-like, slightly salty flavor of the mushrooms set a light, fresh tone. Alongside them are a delicate duck pâté, eggplant spread, and dried venison with lingonberries, where deeper, spicier notes come through, while the lingonberries add a tartness familiar from childhood.

The salads continue the theme, from classic “Tsar-style” Olivier salad to the bold pairing of chicken liver and raspberries, where the warmth of the liver meets the freshness of the berries in an unexpected yet perfectly balanced duet.

Next comes 24-hour shchi with beef brisket: rich and warming, with the very depth for which shchi is traditionally simmered for hours. It is paired with a penny bun gribovnitsa (mushroom soup) with buckwheat: the aroma of the forest, tender grains, and a refined mushroom base.

The most expressive part of the story is the main course. Meat dishes include rabbit, lamb, and venison, ranging from delicate to rich and full of character. Fish dishes include smelt, pike-perch, and coho salmon, ranging from delicate to substantial, each with a vivid expression of its natural flavor. Signature crayfish dishes and grilled specialties complete the picture—the very dishes that make you want to escape to the countryside. All of this is served with artisan bread that brings the flavors together.

A separate chapter is devoted to pelmeni. Kundyumy with mushrooms and chicken, Siberian venison pelmeni, and pelmeni made according to a beloved grandmother’s recipe: from tradition to personal memory and from classic flavors to the warmth of family.

Desserts bring the story to a close, including a sponge roll with cream and berries and apple pie with ice cream—light, familiar, and all the more comforting for it. The meal can be complemented by a bar menu featuring alcoholic and non-alcoholic beverages.
